A Cheese-Making Tradition of Over 50 Years

The Gorfolí Cheese Factory has its origins in Taborneda, Illas, a small village surrounded by green pastures and old stables that feed the dairy cows of the region. For more than half a century, this family-owned business has been dedicated to the artisanal production of fresh, tender cheeses and cottage cheese, using the best Asturian milk.

It all began when Mrs. Clotilde González started selling the cheeses she made at home in the traditional market in Avilés. Her fresh and juicy product was widely accepted, so she soon had to collect milk from other nearby farms to meet the growing demand.

Over the years, the Gorfolí family professionalized the production and sales, adapting to the new times without losing the artisanal essence of their products. Today, Gorfolí has a factory in Taborneda, four stores in Avilés and Gijón, and a distribution network that allows them to reach all their customers while maintaining the traceability of each cheese.

Crafted with Care and Tradition

The Gorfolí Cheese Factory has been modernizing over time, but has always maintained its artisanal identity. All their cheeses are made with the best quality Asturian cow's milk, following production processes that guarantee maximum hygiene and traceability of the product.

From the moment the milk arrives at the factory until the cheese is sent to the stores, Gorfolí takes care of every step of the process. First, an analysis is carried out in the laboratory, then the milk goes through the reception and pasteurization room. Subsequently, the milk is taken to the production room, where it follows a controlled flow until it reaches the corresponding vats.

Once produced, the cheeses mature in specialized chambers for the necessary time, whether 20 days for the Tender Cheese or until the next day for the Fresh Cheese and Cottage Cheese. Finally, they are distributed to the Gorfolí stores, maintaining the cold chain and the ideal conditions for consumption.

The Gorfolí Cheese Factory is located in a privileged natural environment, at the foot of the Peak that gives the company its name. Surrounded by green pastures, old stables and beautiful oak trees, the Gorfolí artisans produce their cheeses with the care and tradition that characterizes them.

In addition to caring for the quality of their products, Gorfolí is concerned with maintaining the landscape surrounding the factory. They consider this natural environment to be a fundamental part of their identity and the values they convey in each of their cheeses.

Flagship Products: Tender Cheese, Fresh Cheese and Cottage Cheese

The Gorfolí Cheese Factory has become famous for its three flagship products, made with the highest quality and following traditional recipes:

Gorfolí Tender Cheese

This cheese, awarded as the best in Asturias, is characterized by its melting texture and mild flavor. After maturing for 20 days in the Taborneda facilities, it acquires a characteristic creaminess and yellowish color. It is perfect to accompany a cheese board or to use in the kitchen.

Gorfolí Fresh Cheese

The flagship product of the cheese factory, known for its juiciness, harmony and softness in texture. With clean aromas that evoke the fresh milk of Asturias, this fresh cheese is ideal to be enjoyed in multiple ways: in salads, with sweets, anchovies, or simply on its own.

Gorfolí Cottage Cheese

Also made with fresh pasteurized cow's milk, the Gorfolí cottage cheese is a light and sweet product, with a granular and creamy texture. Perfect to accompany with fruit, honey, jam or simply with a touch of sugar or sweetener.

Present Throughout Asturias

In addition to the factory in Taborneda, Gorfolí has four of its own stores where all its fresh products can be found in the best conditions:

  • Gorfolí Calle Cuba: Located on Calle Cuba, 12 in Avilés, in front of the Las Meanas Park.
  • Gorfolí Gijón: Located inside the Mercado del Sur in Gijón.
  • Gorfolí La Plaza: In the traditional market of the Plaza de Abastos in Avilés, where Gorfolí's journey began.
  • Gorfolí el Quirinal: Located on Calle del Prado in Avilés.
